When we arrive at the 101st floor, the first impressive thing is the view of the sea. Immediately we have the feeling of being on the deck of a boat at sea.

The surface of the restaurant is presented in a succession of spaces of various sizes more or less cramped like a boat cabin or an inhabited bridge, like the Ponte Vecchio with its various jewelry stores, it alone allows to tell a story of the city of Florence, capital of Tuscany.

Automatically the idea was to develop a restaurant of various atmospheres to enable the chef to showcase Tuscan cuisine from the Tyrrhenian Sea to the Apennines passing through the Casentino valleys & the agricultural basin of Mugello.

The restaurant is composed like the Ponte Vecchio with its multiple jewelry stores, the whole forms a sequential walk of Tuscany, the customer, the guest can choose an environment to taste the cuisine of the Tuscan terroirs.

The restaurant is divided into 5 Territories, all complementary each other.
